Fully Loaded Cauliflower
Bacon. Things cooked in bacon. Things that make me go: “mmmmm”. Fully loaded cauliflower makes Mila go MMMMM!
This is an adapted recipe from a site I’ve been getting inspiration from a lot lately. I’m eating fairly Paleo/Primal/whatever you want to call it – no grains (that means wheat, barley, oats, rice, corn) is the main thing, no processed foods – basically real yummy whole food! I’m not dieting, I’m quite happy with my weight; lately my blood sugar levels have been back to sporadic at best and it’s got me worried and looking for some balance.
Technically you’re not supposed to eat dairy but giving up cheese permanently is an adventure I’m currently not interested in. One thing at a time, anyway. On to the food.
This is a frigging delicious 15-minute side dish I had last week with ham and cheese stuffed chicken and salad. I’ll post the chicken recipe when I make it again and actually get some “action shots”.

1 bag of frozen cauliflower florets
1/3 cup grated cheddar cheese
6 slices of bacon (I use the “Naturals” kind with no nitrates or preservatives)
Dash of pepper
Preheat oven to 350 degrees Fahrenheit. Fry the bacon until crispy. Set bacon aside – leave the grease in the pan. Add cauliflower, toss until lightly coated in the bacon grease, and cover. Heat over medium low heat until thawed but not cooked (about 5 minutes).

Meanwhile, slice or crumble the bacon.

Move the cauliflower into a glass baking dish, sprinkle with desired amount of pepper and cover with the bacon. Bake for 10 minutes, then sprinkle the whole dish with cheese and bake for another 5 minutes or until cheese is melted and bubbly.
